MasterChef: The Professionals Winner 2024

Friday May 1st | Seating from 5pm

Dan Merriman is a chef who’s built his career around proper cooking - starting out in busy kitchens, learning the foundations, and developing a style that focuses on flavour above everything else.

His approach is rooted in modern British cuisine, but without overcomplicating things. Dan is known for taking good ingredients and letting them speak, using techniques that add depth without losing the point of the dish, while still relaxed and enjoyable to eat.

He has spent years working across different kitchens, shaping a style that balances slower, more thoughtful cooking with fresh, lighter elements. Pickling, fire cooking and strong, clean flavours all play a part in what he does.

For one night only, he’ll be joining Orbis Stamford as a guest chef, creating a menu that fits seamlessly into the restaurant’s 100% gluten-free kitchen. It’s a chance to experience his cooking in a new setting, and to bring something different into Orbis as we build towards our 5th anniversary.


For one night only, Dan will be taking over the kitchen at Orbis Stamford, creating a completely one-off menu designed just for the evening. It’s a chance to see a different side of the space, with a menu that won’t be repeated and dishes you won’t find on our usual offering.


Everything will be served within Orbis’s 100% gluten-free kitchen - something we’re known for - proving that you don’t have to compromise on flavour or creativity to deliver something inclusive.


This isn’t a standard service. It’s a one-off, limited night, and once it’s gone, it’s gone.
It also lands at the start of a big month for us, as we build towards our 5th anniversary on 21st May - making it the perfect time to come in, try something different, and be part of what’s coming next.
